Peppers - Italian Frying

Italian frying peppers are sweet at every stage from green to yellow to red. They are both sweet and slightly smokey, about 6-8 inches long and tapered from the stem to the tip. The flesh is thinner than bell peppers and with few seeds, they're perfect for slicing and frying. Raw, they are crisp and sweet/spicy, but frying them imparts a delicate smoky flavor.
