Large, dark green, cabbage-like leaves retain eating quality for up to 2 weeks or longer. Our collards are picked smaller and do not require long cooking times. We harvest our leaves young when they are still tender. Our favorite way to prepare these is a quick cook (~5 minutes) to wilt them in a cast iron in a bit of butter and salt!
To keep your collards fresh for longer always store them in a closed container or bag, in a high humidity environment (95-100%) at 34-36ºF.
